amo_mea_filiis. Posted December 12, 2012 Share Posted December 12, 2012 I somehow created a dish adored by my son that we have dubbed the egg pancake. It is very, very time intensive, but he loves it. In a specific pan, put a small amount of olive oil and butter and turn the burner on low. Crack 2 eggs into a measuring cup and stir (is whip or beat a better word?) the crap out of them. Take the pan with the now melted butter and hot oil to the sink. Turn the pan coating it with the butter/oil all over and dump out the excess so you have a thin layer left. Put the pan back on the stove and rinse the sink. Beat the crap out of your eggs for another couple seconds and pour them in the pan. When the bottom of the eggs are cooked, flip it over to cook the other side. When both sides are cooked, slide the delicate egg pancake on to a plate and carefully decorate with ketchup. A smile is usually preferred, but a zombie gets a laugh. Ok. Seriously, this takes 5-7 minutes tops, even easier than scrambled eggs. Ds adores it, and i have made a connection to his behavior and better breakfasts. This is his favorite protein. He refuses his egg pancake occasionally and will have no protein for breakfast which leads to bad days. Eating a good breakfast sure doesnt "fix" him, but it seems that a protein only breakfast leads to better days. Help me change this up a bit! By change, i only mean shape. aggieamy Posted December 12, 2012 Share Posted December 12, 2012 I don't know about shapes but if he likes eggy pancakes you should try Swedish pancakes. I bet he'll love them and they are very easy. Swedish pancakes - similar to crepes 4 eggs 1 c flour pinch salt 2 T sugar 1 c milk 3 T sour cream Beat eggs until they start to look fluffy. Add remaining ingredients in mixer. Batter will be runny. Grease griddle with butter or oil. (I do this even if I'm using non-stick.) Add batter to griddle. Brown the pancake on one side. Flip pancake over when bubbles appear on surface.
