What's your three best side-dishes for serving turkey?

I always make mashed potatoes, sweet potatoes, stuffing and green bean casserole. If you are in the US, the green bean casserole recipe is on the side of the french fried onion can.

 

My sweet potatoes - peel, chop, boil, mash like for mashed potatoes but add butter and brown sugar. I can't give you amounts cause it's until it tastes right.

This isn't something you cook, but it does need to sit for at least 8 hours for the flavors to blend: cranberry, orange, pineapple and pecans chopped and with sugar added. We like the sweet/tart flavor to counteract turkey/dressing/potatoes etc. If you want a cooked dish perhaps a sweet potato casserole?

I did my dinner mostly ahead of time this year and it worked fabulously. I watched an episode of Sara Moulton weeknight meals on PBS and followed her schedule.

 

I cooked the potatoes 2 days ahead of time ( I was going to be gone all day Wednesday) and when they were done, drain, and rice them. I didn't have a ricer, so I just mashed them with my potato masher.) Put in fridge. Thursday about 30 minutes before we ate, I put the bowl in the microwave for maybe 10 mins, until they were hot. Heat up your butter and milk and mix them all togther. Potatoes are done. Easy.

 

I also made my gravy base ahead of time. Make a roux with butter and flour ( 1 stick of butter with 1/2 cup of flour). stir in 4 cups of chicken stock. Cook for a few minutes until it is all nice and thick. Put in fridge until Thursday. When the turkey is done, take the drippings and add to the gravy base. Cook til it all mixes together. I ended up with about 4 more cups of drippings from the turkey, so I boiled it down for a few minutes before adding to the premade gravy base. Adjust seasonings like salt and pepper. It was fabulou and so very easy.

 

I also cooked my sweet potatos ahead of time and reheated them. I used America's Test kitchen method. Put 2 large sweet potatos in a kettle with 4 tablespoon butter and 1 tbls cream. Cook on lowest setting on your stove for 35 - 45 minutes. Add seasonings, and mash.

I just reheated it before we ate.

I am making a turkey tonight that we had given to us for Thanksgiving and I hadnt had a chance to make. I am planning on homemade dressing (my extended family we spent Thanksgiving with all likes stovetop and not homemade :bored: ) so I missed this last week. I am also planning on making cranberrys and green bean bundles :drool5:

My favorite is Cheesy Rice and Broccoli.

 

2-3 C cooked rice

1lb steamed broccoli

1 onion, chopped

8oz sliced mushrooms

1 large jar Cheez Whiz

1 can cream of mushroom soup

 

Saute onion and mushrooms. Mix all ingredients together. Heat in 350* oven for 30ish minutes (until heated through). You can put this together a day or two in advance - refrigerate and then just heat in the oven before serving.
