Any other herbs? cumin? I am going to stick my head in the fridge to see if I have a hot pepper, if not, I have cayenne powder, I can add a bit of that. Thoughts? I might also consider just a wee bit of red onion. Not much, but just enough to break up the sweetness and to play with the salt. Sounds yummy though. Are you putting it on top of something special? Never mind that last part. I'm editing this to say that I had obviously skimmed over the part about the roast pork loin. Sounds absolutely scrumptious!!! Have to avoid the onion due to allergies, added just barely a tich of garlic, and a tiny bit of salt. Called dh, and he is bringing me a serano. Thanks, ladies! I was thinking, when I read your list of ingreds, that it seemed a bit on the sweet side. The jicama is crunchy but does it have much of its own flavor to counter the sweetness of the fruits?
