Wendy Inman Posted October 29, 2011 Share Posted October 29, 2011 These are our favorites! I believe i typed this up from an old Taste of Home magazine from my grandma. They are a little crisp on the outside and chewy inside. Golden Raisin Oatmeal Cookies ¾ cup butter, softened 1 cup packed brown sugar ½ cup sugar 1 egg 2 tbsp water 1 tsp vanilla extract 3 cups quick-cooking oats 1 tsp salt 2/3 cup all-purpose flour 2 tbsp grated orange peel 1 tsp ground cinnamon ½ tsp baking soda 2/3 cup golden raisins In a mixing bowl, cream butter and sugars. Beat in egg, water and vanilla. Combine the oats, flour, orange peel, salt, cinnamon and baking soda; gradually add the creamed mixture. Stir in the raisins (dough will be stiff). Drop by level tablespoonfuls 2 inches apart onto ungreased baking sheets. Bake at 350º for 12-15 minutes or until edges are lightly browned. Remove to wire racks to cool. Wendy’s note: I have substituted 1 tsp of orange extract for the orange peel or even left the orange out completely and they are still great.
