If you were on complete bedrest for six weeks

Fruit, vegetables (cooked without fat, or raw without fatty dressings)... You could literally eat fresh fruit and vegetables non-stop and still consume very few calories. Also beans (high in fiber, which fills you up, high in protein, low in calories and fat) and limited whole grains.

 

No refined grains at all, no sugars, very limited dairy and lean meats. (And limited oils, nuts, seeds...)

 

In practical terms, assuming you can't prepare much for yourself, I'd go for: vegetable soups (boxed or low-sodium cans) or canned vegetarian chili or bean soups; bagged salads (unless someone is kind enough to prepare salads for you); easy to prepare/eat fruits (clementines, apples, bananas, grapes, all kinds of berries this time of year, etc); raw carrot sticks, celery sticks, sugar snap peas, cucumber; cans of vegetarian chili or bean soups.

 

For me, I know I'd be tempted to eat out of sheer boredom. I might even need to implement a schedule for myself, so I didn't eat too frequently just for something to occupy myself. ;) And have lots of water available to drink...
