Julie in CA Posted January 25, 2008 Share Posted January 25, 2008 I'll start: I love to have this meal. It seems like a huge meal, with only about 375 calories. First I scrub a small-medium sized potato, poke it with a fork, and put it in the microwave to bake. Next, I cook a boneless skinless chicken bre*st in a pan sprayed with Pam. I remove the chicken from the pan, and then add 1 cup sliced mushrooms and 1/4 cup chopped onions. I cook these until they're done, and then add 1/2 cup cream of mushroom soup, a tiny dab of chicken soup base, garlic powder, and the chicken (chopped). I cook all of this in the saucepan and then pour it over the baked potato. I eat this with some seasoned and steamed broccoli. Yum! Quote Link to comment Share on other sites More sharing options...
Sunshyne Posted January 25, 2008 Share Posted January 25, 2008 Ooooh. That *does* sound yummy! I have a blackened salmon filet and a HUGE plate (think 4 or 5 cups) of steamed veggies. For lunch I had 4 baked corn torillas with a little bit of cheese sprinkled on them and served with a lot of salsa. That was about 240 calories & was crunchy, salty, yummy. Any low caloried snack ideas?? (Besides popcorn) I've lost 8 pounds in the past 2 weeks, by counting calories (in addition to my regular exercising). 12 pounds to go! I love salmon, and it's pretty satisfying in terms of protein and "fill 'ya up-ness", but I wish it was just a *little bit* less calorie dense. I do a lot of steamed veggies too, but I usually go for the I Can't Believe it's Not Butter spray (yeah, the idea of it grossed me out, but it's not sooo bad). Actually, I'm pleasantly encouraged that when I team up a huge portion of steamed veggies, I can indulge in a really great piece of meat too, for not so many calories. Today I'm going to have the salmon and veggies, tonight I'll probably have marinated flank steak and more veggies. Maybe a salad too, if I can afford 100 calories to put some cheese on it. I don't like salad dressing, but I've gotta have a little cheese on my salad. Well, thanks for indulging in my dietary focus with me! Hopefully more people respond soon. The great ideas keep me inspired. ~Julie~ p.s. My favorite low calorie snack that's kinda crunchy, salty, and mouthwatering, is Vlasic kosher dill pickles.
