Brainstorming a "Nutrition Course"

I'm trying to create a library research/project based Nutrition Course -- here is the list I've come up with so far:

 

1.notes from various books = compile, research discrepancies

2.vitamin/mineral chart

3.recipe collection with nutritional data (make)

4.nutritional guidelines from FDA

5.examine FDA guidelines in light of other data

6.track eating (paper of SparkTeens) for 1 week, compare to FDA guidelines

7.collect food-related principles/quotes to live by

8.content/dangers of fast food

9.food combining principles (gather from various sources)

10.symptoms of poor nutrition (chart)

11."superfoods" - what are they, nutritional value, where they come from

12.water - importance of

13.dangers of junk food

14.omnivore, vegetarian, vegan, raw foodist -- benefits/drawbacks of each

15.read “nutrition†magazines/articles - how do they differ

16.nutritionist as a career - requirements, career outlook, job titles, salary, training programs)

17.categories - protein, carbs, etc, what to eat to get enough

18.surprisingly good things about foods though of as bad, and vice versa

19.nutrition as a element of a “healthy lifestyleâ€

20.effects of heating on food, on digestion of food

21.good fats/bad fats - sources, body needs, reactions

22.sweeteners - kinds, sources, body’s reaction, side effects

23.research a food - uses, types, growing conditions

24.learn about benefits of sprouting and dehydrating

25.create own recipes, make, rate, alter, etc - determine nutritional content

26.food related ads - discuss/analyze

27.nutritional remedies to common illnesses

28.nutrition in other cultures - results

 

More ideas? Anyone have a nutrition course syllabus already planned out? :)

I, too, would be interested in any nutrition information and resources as that is going to be part of our mandated Health 1/2 for the Fall. I haven't much to add yet as I haven't even started planning this.....

I have a favorite book based on the research of Dr. Weston Price. It is called Nourishing Traditions: The Cookbook that Challenges Politically Correct Nutrition and the Diet Dictocrats. I also think that Michael Pollan's book, The Omnivore's Dilemma: A Natural History of Four Meals is fabulous. You can check reviews on Amazon and see if it might be of interest to you.
