MJN Posted October 3, 2009 Share Posted October 3, 2009 CHICKPEA SALAD 3 cups coarsely chopped tomatoes (approx 4 medium) 1 15-oz. can garbanzo beans (chickpeas), rinsed/drained 1/2 large cucumber; peeled, quartered, sliced (approx 1 cup) 1 cup chopped sweet pepper 1 cup snipped fresh cilantro 1/4 cup finely chopped onion 1/4 cup extra virgin olive oil 3 Tbsp. red wine vinegar 1 tsp. kosher salt 1 clove garlic, minced stevia (1/8 tsp. sugar) Mixed salad greens (optional) Lemon wedges, squeeze the juice into the mixture and then use to garnish In large bowl combine chopped tomatoes, garbanzo beans, cucumber, sweet pepper, cilantro and onion. Set aside. Prepare dressing in shaker jar combining oil, vinegar, salt, garlic and sweetener. Shake well. Pour over vegetable mixture. Chill for 4-24 hours. Allow mixture to stand at room temperature for 15 minutes before serving. Serve alone or with mixed greens. Garnish with lemon wedges. Makes 8-10 side dish servings, 4 entrée salads. Each serving: 134 cal., 8g total fat (1 g sat. fat), 0 mg chol., 419 mg sodium, 14 g carb., 4 g dietary fiber, 4 g protein. Honestly, this is so good, that you will want to double it. We couldn't even wait for it to chill so I'm sure it's even better after being chilled. We think it would make a good side dish with grilled salmon.
