Spin off of another thread.... Can you share your NO meat meals? ...m

There was another thread about not affording the high cost of meat now a days and I grew up in a house that on your plate you had a meat, vegetable and grain of some sort... (very basic meals) :confused:

 

However I want to spice it up a bit but still save money... any clues on where to get this info....

 

:DWould anyone care to share their families favorite no-meat recipes?

around here more often than not. We eat meat, just not that much or that often. Check out some veg. cookbooks from the library for a little at home inspiration. These are a few of our standby favorites.

 

Pasta of all sorts served with garlic bread and a side salad.

 

Spinach Lasagna

 

Black Beans & Rice with cornbread

 

Chile topped with cheese & sour cream served with cornbread or tortilla chips

 

Spinach Quiche

 

Rice and Chinese Food (I like to stir fry or do broccoli with the Oyster sauce) I serve this up with egg rolls.

 

I also like to serve up a big Dinner/Breakfast Homemade Waffles are always a hit.

Oh goodness, I'm glad you started this thread. I am an avid frugal-ite and am always looking for new recipes. I'll be watching to see what exciting recipes others share so that I can add them to our rotation.

 

Many of our favorites are so basic that they don't really have recipes. Bean burritos are a huge favorite. I just add a big veggie salad & call it a well-rounded meal. No recipe: I either use whole beans, or I mash them & add whatever spices sound good (garlic, cumin, etc.). You can add a bit of cheese or a bit of sour cream if you like, but it adds to the cost.

 

Vegetable soup and homemade, hearty bread is another. Again, no recipe: I start with veggie broth and add whatever vegetables I have on hand. Season to taste & call it a day.

 

Veggie stir-fry over brown rice. I don't add anything with this one. It's quite filling, and fine nutritionally as far as I'm concerned.

 

Lentil soup & bread. Let me know if you need a recipe for the soup.

 

Basically, I'm all about things that are simple. I love to cook, but we just don't have much time these days. So, if I can start it in the morning or throw it together in under 30 minutes at the end of the day, then it's a winner for our everyday rotation.

 

Can't wait to see what others do.

We have bean tortillas, too. When I'm lazy I'll add some black beans, onions, and green peppers to tomato soup. That's pretty filling - especially if you have some bread for dipping. I got Twelve Months of Monastery Soups by Brother Victor-Antoine d'Avila-Latourrette for Christmas, which we've been cooking our way through. Many of his recipes are vegetarian. We also do meals that are mostly potato - baked, fried, boiled, whatever with some other veggies and a bit of cheese.

Scrambled eggs are a big hit for dinner here. I generally add some cheese, and some tomato and avocado, if I have those on hand. You could toss in some spinach, too.

 

Spaghetti is also popular. DH prefers it with meat sauce, but I actually like it better without.

 

Macaroni and cheese. I make from scratch, and add a bag of mixed veggies. Very tasty!

 

I used to have a couple of great vegetarian cookbooks, but loaned them to a friend and never saw them again! But you can find tons of good vegetarian recipes online, or in library books.

A quick one that was on the old boards (I'm sorry I don't know who it was - but I love the recipe)

 

1 can of black beans (rinsed well for me)

1 can diced tomatoes, drained

1 can corn

 

Heat it all up in a skillet and add some seasonings (chili powder, cumin, maybe a clove of garlic). Wrap up in tortillas with a little sprinkle of cheese. Yumm.

 

Dh doesn't like beans, eggs, and he's allergic to most nuts so our "big meal" of the day has meat, but dd and I generally eat meatless for supper -

 

english muffin pizzas - add some sauce, cheese and veggies and you're set (I keep homemade sauce in the freezer in 1 cup portions just for this and pizzas)

 

eggs - every which way - scrambled with some veggies and cheese and put in a tortilla, fried with toast to dip in the yolk, soft boiled and served in cute egg cups, quiche cups (regular ol' quiche but cooked in muffin tins and then popped into a bag and stashed in the freezer.

 

beans - see recipe above, baked beans, refried beans and cheese in a tortilla, bean soups

Black Bean Tortilla Casserole. I've shared this one recently on the boards. It's meatless, easy to prepare, and one of our favorites. Read the reviews and then modify to suit yourself. It's prety fail-safe. I use half the onion, twice the garlic, include the juice from the canned tomatoes (I get the ones with mild chili -- adds depth), and use salsa instead of picante sauce. About the only thing to watch out for is to make sure the sauteed ingredients are not overly dry or overly wet when you use them (should not be soupy, but not too dry). I keep it simple by serving with just sour cream and guacamole from the store. Everyone loves this!

I'm trying not to envy y'all...I would love to eat many more meatless meals but my hubster just ain't havin' it. He LOATHES beans of any kind (I love them all!) and the only veggie he'll eat is corn. Yes, I'm complaining. :) I loveeee veggies. I'm sure there is a reason why God matched me up with someone so culinarily incompatible (I don't know if that's a word, but I like it anyway), but sometimes I just need to whine about it a bit! :)
