buddhabelly Posted July 31, 2009 Share Posted July 31, 2009 1-1/2 cups honey 1/2 cup butter, softened 1/4 cup sunflower oil 4 eggs, well beaten 1 cup whole wheat pastry flour 1 cup unbleached white flour 2 teaspoons baking powder 2 teaspoons baking soda 1/2 teaspoon salt 2 teaspoons cinnamon 2 teaspoons vanilla extract 3 cups grated carrot (about 1 lb. carrots) 1/2 cup chopped walnuts Cream Cheese icing (page 267) Preheat oven to 350 degrees. Whip honey, butter and oil together in a medium-sized bowl. Add eggs. Mix dry ingredients together and blend into honey-oil mixture. Add vanilla. Fold in carrots and walnuts. Bake in oiled 10-inch springform tube pan 45 minutes to 1 hour, until toothpick comes out clean. Cool. Cut cake in half horizontally to make 2 layers. Ice between layers and on top and garnish with a few chopped walnuts. 10 servings. CREAM CHEESE ICING 1-1/2 cups cream cheese, softened 1/2 teaspoon vanilla extract 6 T. maple syrup or 4 T. honey Combine all ingredients in a bowl. Mix until smooth. (An electric mixer works well.) This recipe makes enough icing for a 2-layer top and bottom of a cake or 1 layer with sides iced as well (almost 2 cups). Now I'm gonna have to make this.
