This is my most versatile recipe, the original recipe came from a friend about 9 years ago.

 

Mexicali Chicken (this is the original recipe)

2 boneless chicken breasts

1/4 cup olive oil

1 can stewed tomatoes or salsa

1 can chili beans

6 oz. frozen corn

2 cups chicken stock

1 1/2 cups rice

shredded cheddar cheese

Cook chicken in olive oil and cut it up or shred. Preheat oven to 375 degrees. Pour rice and stock into a baking dish. Place chicken on top, add everything else except for cheese. Cover and bake 30 minutes or until rice is tender (depending upon the kind of rice, it may take longer) Remove foil, add cheese and let it melt. Serve.

 

I have done this recipe in the crockpot before, just watch to see if you need to add more water. Same goes with using brown rice vs. white.

I have also used hamburger or shredded beef in place of the chicken (or use shredded chicken) and beef broth instead of chicken broth. I really feel it is very versatile and is healthy, you can also use mozz. cheese instead of cheddar and probably black beans in place of chili beans.

This recipe can really be several dishes, I like it best baked in the oven. We sometimes have it with sour cream, chips and lettuce or I serve it with corn bread and a salad. I will use leftovers and roll in tortilla shells.

Put it over brown rice or small pasta, this with sauce over spagetti, add leftovers to minestrone, drain and panfry and put on toast, eat cold on garlic toast, stir into a casserole, freeze.

You can make it in a crock pot or on the stove or baked in the oven.

My family LOVE Dorito casseroles, here's our fave, works EVERY time:

 

DORITOS CHICKEN CASSEROLE

Yield: 6 Servings

1 Chicken

1 pk Doritos (nacho cheese flavor

- large bag)

1 cn Corn (whole kernel)

6 black olives

Cheese (grated; to taste)

1 sm Onion (diced)

1 can Cream of chicken soup

1 can Cream of mushroom soup

1 can Milk

1 can tomatoes

 

Boil and debone chicken.

Layer chicken, Doritos, cheese, onion, and

corn in casserole dish.

Mix chicken soup, mushroom soup, milk and

tomatoes, chopped olives.

Pour over casserole. Top with cheese.

 

Bake at 375 degrees for about 30 minutes.
